Instant Coffee Extract

Ever wanted coffee but others want tea and you can't stand instant coffee crystals. Well, try this.
1 pound coffee grounds (your favorite brand)
7 cupss cool water
1 large glass container (gallon pickle jar works great)
In a large glass container, mix the coffee grounds and water. Mix gently. Cover. Let the grounds steep at room temperature for 8 to 12 hours (or overnight). In the morning, place a large coffee filter in a funnel and pour mixture through it slowly. Discard the grounds. Put the liquid in a large bottle and refrigerate or freeze in ice cube trays.
TO PREPARE COFFEE:
Use 2 tablespoons of coffee extract(or to taste) in a mug and fill with hot water. Makes about 28 cups of coffee.
