Mary Alexander's Famous Carrot Cake
from Teri Czerwinski ( Mary Alexander Memorial Cookbook)
2 cupss sugar
4 eggs
1-1/2 cups oil
1 tablespoon vanilla
3 cups flour
1 teaspoon salt
2 teaspoons baking soda
3 teaspoons cinnamon
3 cups carrots, finely grated
Mary Alexander's Famous Carrot Cake Frosting
Blend sugar and eggs. Add the oil and vanilla. Mix well. Sift together flour, salt, baking soda, and cinnamon. Blend dry ingredients with sugar and egg mixture. Mix well. Add carrots. Bake in 2 paper-lined cake pans at 350° for 30 to 35 minutes. Cool on racks.
