Dot's Corned Beef Hash

   2 wholes potatoes (baseball sized)
   1 large sweet potato
   1 bell pepper
   1 pound corned beef
   1/4 jalapeņo pepper diced very small (no seeds) optional
   2 tablespoons butter
   Small amount oil
   12 eggs fried, over easy


Instructions:
Carefully dice (1/4") the potatoes, onion, bell pepper, and corned beef. Cook with a small amount of oil and 2 tbsp butter. Top hot hash with eggs over easy.
